Death in the Afternoon, popularly known as Hemingway Champagne, is a cocktail made up of absinthe and champagne created by Ernest Hemingway. This drink shares a name with Hemingway’s book “Death in the Afternoon”.  Absinthe is an anise-flavoured spirit. For several years, it was illegal in the United States and throughout much of Europe.  At present, it is legal and usually quite high proof. According to the “Ultimate Bar Book”, the cocktail was one of the Hemingway’s favourites.  However, it was not the only cocktail he discovered.  Death in the Afternoon is known for both its high strength and decadence. It is milky in appearance on account of the impulsive emulsification of the absinthe and bubbly, which it takes from the champagne.



When making Death in the Afternoon, you only need to prepare two essential ingredients and here they are:
  • 1 ounce pastis or absinthe
  • 4 to 5 ounces of sparkling wine or champagne
To make this cocktail, you don’t have to follow complex step. You also don’t need to spend more time and effort. To give you a concrete guide, simply follow the succeeding steps:
  • Pour the pastis or absinthe into a champagne flute, a champagne coupe or champagne glass.
  • Add the sparkling wine or champagne and serve
Depending on your choice, you can reverse these directions through pouring the champagne first and adding the absinthe on top. This has the disadvantage of preventing you from mixing until the right color is achieved. But, if you use the right absinthe, it will float on top of the champagne for a bit, creating an amazing effect.
When a cocktail recipe calls for absinthe, you can substitute Pernod.  The original recipe for this alcohol drink specifies 1 ½ ounces of absinthe and 4 ounces of champagne. That is why, be careful not to add more ounces of absinthe to avoid a strong taste. There are different ways to create Death in the Afternoon. The absinthe can be added to the glass after the sparkling wine. Other alternatives have arisen due to the difficulty of getting absinthe. Some people use Absente to replace absinthe.  Variants which use a substitute to absinthe are sometimes given a distinct name. Some recipes direct the person making the cocktail to use ingredients in addition to the absinthe and Champagne.
